Why this Mocktail is for you
Naturally alcohol-free – perfect for baby showers, brunches, or relaxing nights
Refreshing & fruity – with pineapple juice, lime, and real strawberry puree
Creamy finish – a coconut cream popsicle adds the dreamiest touch
Beautiful to serve – garnish with a flower and wow your guests
Ingredients You’ll Need
For the Strawberry Puree
1 cup fresh strawberries (hulled)
2tsp powdered Swerve (or regular powdered sugar)
For the Mocktail:
2 oz strawberry puree
1 oz coconut water
1 oz lime juice (freshly squeezed)
0.5 oz coconut syrup
1 oz pineapple juice
1 coconut cream popsicle (store-bought or homemade)
Ice cubes
Edible flowers or fresh berries for garnish
Step by Step Instructions
1.Blend the Strawberry Puree
Add strawberries and powdered Swerve to a blender. Blend on high for 15–30 seconds until smooth and vibrant. Set aside.
2.Build the Mocktail
In a cocktail shaker or mason jar, combine:
Strawberry puree
Coconut water
Lime juice
Coconut syrup
Pineapple juice
Shake well for 15-20 seconds until nicely chilled.
3.Serve
Fill a tall glass with ice cubes. Pour the tropical mocktail mixture over the ice. Now gently slide in your coconut cream popsicle – this will melt gradually and give your drink a creamy, dreamy finish.
4.Garnish
Top it off with an edible flower or a sliced strawberry. Sip and drift away to a palm-lined beach (in your imagination).

This Strawberry Coconut Mocktail is proof you don’t need alcohol to enjoy a festive, flavour-packed drink. It’s perfect for any warm-weather celebration—or for treating yourself to something a little bit special, just because.
